Vegetable Fajitas

Fajitas are a great way to use up left overs without having to eat the same thing that you did the night before. Also, it’s tasty and healthy 🙂 Fajitas are like bread and butter pudding, they actually taste better with leftovers rather than veggies cooked especially for them.

Recipe Ingredients

  • Left over vegetables
  • Some eggs
  • Fajitas
  • Tomato Sauce
  • A tin of chopped tomatoes or salsa sauce (optional)
  • Spice (Any spice will do, I like to use a Cajun spice or mixed herbs and chilli)

Fajita Recipe Instructions

  1. Heat up your left overs in a pan
  2. Add the eggs (you’re not making an omelette, just add one or two)
  3. Mix in the tomato sauce, tomatoes or salsa sauce and add some spice and / or herbs
  4. Wrap in a fajita and serve warm
